Almond Pulp Coconut Poppy Seed Balls

Here is one sweet idea on how to use the leftover almond pulp from making almond milk.

Ingredients

  • Almond pulp (left over from 150g almonds for the almond milk)
  • 130g coconut flour
  • 4 Tbsp maple syrup
  • 4 Tbsp poppy seeds
  • 4 Tbsp coconut oil (melted)
  • 50g (or ca. 6 1/2 Tbsp) oat flour
  • 5 Tbsp almond milk

Directions

Preheat oven to 180°C (356°F) and prepare a baking tray with parchment paper.

Add all ingredients in a bowl and mix well. Press small amount of the mixture with your hands; it should stick together.
Form balls from the mixture and place them on the baking tray. I made 26 balls of ca. 3cm (1.2 inches) in diameter (ok, maybe ate one or two while forming them :))

Bake for 20min, or until lightly browned on the top.
